Cheddar Scallion Bacon Scones

We adore these cheddar scallion scones. They are little savory, fluffy bites of love that are studded with crispy bacon. Divine! Perfect for breakfast or served as your bread with soup or salad. Ideal for March and Saint Patrick's Day!

Ingredients

Instructions 

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
  • In a large bowl combine the flour, salt, pepper, baking powder and soda. Using your fingers, a fork or a pastry blender, cut in the butter until it forms coarse crumbs. Stir in the grated cheddar cheese. Stir in the bacon and green onions.
  • Stir in the buttermilk. Stir with a spoon until a dough forms, using your hands to bring it together. Turn onto a lightly floured surface and knead gently.
  • Pat the dough in a large circle or divide in half pat each into 6-inch round circles. Brush each scone with melted butter. Place each round on the baking sheet. Cut each round into 4 or 6 slices (or 8 slices, if doing one large circle), or use a biscuit cutter to make rounds.
  • Bake the scones for 12 to 14 minutes, until the tops are slightly golden. Serve immediately.
