Chicken Salad BLT.
This chicken salad BLT is a fun twist on two classic sandwiches. It’s satisfying, tastes incredibly and is super customizable depending on the ingredients you love. Easy to make and even easier to love!
New sandwich alert!!
This chicken salad BLT is going to become a fast new favorite, packed with crispy bacon that melts in your mouth, juicy tomatoes, crisp romaine and your favorite chicken salad.
It’s so easy and tastes SO good. I actually can’t even believe how filling it is.
A few years ago I remember someone telling me that they had a chicken salad BLT and it’s been on my radar ever since. I’ve been thinking about it forever and it sounded fabulous. I just never got around to making it until this summer.
I make many different kinds of chicken salad – and I do so often. My go-tos are this cherry jalapeno chicken salad, dill pickle chicken salad and an oldie but goodie – lemon almond. I’ve also been making a bacon cheddar jalapeno chicken salad this year too. It’s fantastic.
And as much as I love to trash up my chicken salad, this sandwich is one that requires a somewhat basil, classic chicken salad.
To me, this is very much more a chicken salad sandwich with bacon, lettuce and tomato than it is a BLT with chicken salad. Does that make sense?
We already have some fancy flavors with the tomato and the bacon. I prefer not to go overboard with the chicken – that way, the chicken doesn’t lose its showstopping power in the sandwich. And the classic version of that lets the classic BLT ingredients shine!
So because of that, I keep my chicken salad ingredients simple and traditional. Mayo, greek yogurt, herbs, a little mustard. Rotisserie chicken! Green onions. Celery if you want it, though I’d prefer to never see a stalk again.
Keep it easy and light and that way, the sandwich will work without seeming like too much.
After that, it’s the easiest sandwich to assemble:
Toast some sourdough
Layer on your chicken salad
Top with tomatoes
Add the bacon
Throw on the romaine
And boom!
It’s done and ready.
I also like to allow the chicken salad to be my “mayo” or the spread of the sandwich. If you want some extra mayo on there, go ahead and use it! I find it doesn’t need it, but I’m also weird and really love dry golden toast.
The texture of this sandwich is amazing. I crave it. And the flavors – even better. But perhaps what is most shocking is just how satisfying it is. You could even make mini versions for a lunch gathering with friends or serve half of the sandwich with a big arugula salad.
Delish!
Chicken Salad BLT

Chicken Salad BLT
Ingredients
- ¼ cup mayonnaise
- ¼ cup plain greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon sweet relish
- 1 lemon, juiced
- kosher salt and pepper
- 2 cups cooked, shredded chicken
- 2 green onions, thinly sliced
- 1 celery rib, diced
- 2 tablespoons finely chopped parsley
- 8 to 10 slices bacon
- 2 to 3 tomatoes, sliced
- 4 cups shredded romaine lettuce
- 8 sliced sourdough bread, toasted
Instructions
- In a bowl, whisk together the mayo, yogurt, mustard, relish, lemon juice and a pinch of salt and pepper.
- Stir in the shredded chicken, onions, celery and parsley. Taste and season more if needed. This can be stored in the fridge for up to 3 days. It tastes better as it sits.
- Cook the bacon in a skillet until it’s crispy and the fat is rendered. Chop the romaine lettuce and toast the sourdough bread.
- Sprinkle the tomatoes liberally with salt and pepper.
- To assemble the sandwich, spread ¼ cup of the chicken salad on a slice of toasted bread. Top with a few tomato slices. Top with the sliced bacon. Top with some of the shredded lettuce.
- Finish with the other slice of toast and serve!
