My pistachio chicken salad is so flavorful, made with an herby mayo, sweet and chewy dates, crunchy pistachios, scallions and juicy, tender chicken. It’s the perfect lunch!
One of my favorite recipes to experiment with is chicken salad. I love adding different flavors and textures and seeing what else I can come up with. It’s a dish that I often have in my fridge every other week because it’s so easy for me to grab and go.
I don’t always get to have a full “meal” with it, especially if I’m rushing around with work and the kids. But I can always grab some crackers and go to town.
That’s what really counts.
Plus the crunchy crackers and crunchy chicken salad is such a satisfying combo. It’s filling and the texture is wonderful. And the flavor!
We can’t forget about the flavor.
The base of my chicken salad is so wonderfully neutral that it can take on almost any flavors. My most made version is this lemon almond one, but I’d be lying if I said I wasn’t relying on my cherry jalapeno chicken salad from Easy Everyday the last few years.
There is something about that tart sweet heat! Delish.
I almost always add a nut and a dried or fresh fruit. It’s an easy method that works every time. And for the base, I like to do a mix of greek yogurt and mayo. The mayo adds some richness and keeps it from being too tangy. But the yogurt keeps it light. I have never cared for a heavy “wet” deli salad, whether it’s chicken, tuna, egg, etc.
So, this is my solution!
It’s the perfect combo of deli chicken salad and has so much crunch, chew and satiety. I’m obsessed!
You can put this on salad, in lettuce cups, in wraps, with crackers, on toast, make it into a melt and more!

Pistachio Chicken Salad

Pistachio Chicken Salad
Ingredients
- ¼ cup mayonnaise
- ¼ cup plain greek yogurt
- 1 tablespoon dijon mustard
- 1 lemon, juiced
- ¼ cup chopped fresh herbs, like basil, parsley and chives
- kosher salt and pepper
- 2 cups cooked, shredded chicken
- ½ cup sliced scallions
- ½ cup chopped dates
- ⅓ cup chopped pistachios
Instructions
- In a bowl, whisk together the mayo, yogurt, mustard, lemon juice, herbs and a big pinch of salt and pepper.
- Add in the chicken, scallions, dates and pistachios. Toss until fully combined. Taste and season with more salt and pepper if necessary. This stays great in the fridge for up to 3 days.
