It’s a game day weekend!

These walking taco nachos are such a fun spin on the mini walking tacos in personal chip bags. This is a great way to make a big batch, especially if you’re watching the Super Bowl this weekend or entertaining friends and family. 

Sheet pan nachos are my love language and I don’t care who knows it!

So the very important question is… 

Fritos or Doritos are the base? 

Which team are you on?

I’ll let you in on a secret and say that I’ve never really liked either. Doritos have almost always been a huge no for me, fritos were okay, because my grandma would always have them with dip. 

These days, I like to crumble a few fritos over chili or other soups. But I have zero desire to eat them plain. 

I’m very much a regular old tortilla chip gal. That’s what I crave the most and I like them better than anything else. 

But here’s the thing: my kids are straight up obsessed with walking tacos! And one kid loves them with fritos. The other kid loves them with Doritos. The third child eats everything under the sun so he will gladly take either. Sidebar: I’m convinced because as the third child I was just so spazzed that I’d forget to feed him so now he eats everything. 

Kidding! Sort of.

For this sheet pan version, I personally think that Fritos work best. And not just any fritos, but fritos SCOOPS! They have to be the scoops. 

The scoops allow for a bite of everything to be right there on the tiny nacho! Cheese, ground beef, some shredded lettuce and tomatoes, even sour cream. It’s absolutely perfect.

This is how fast they come together:

Brown some ground beef with taco seasoning! I make my own seasoning, but a packet works fine too. 

Spread a bunch of fritos scoops out on a baking sheet in a single layer.

Add a tiny sprinkling of cheese. 

Add the ground beef.

Sprinkle on another layer of cheese.

Stick the pan in the oven for just 10 or 15 minutes. Not super long, just to warm everything and get it all deliciously melty. 

Remove the pan and top with shredded lettuce and tomatoes. I also like a drizzle of sour cream. And green onions! 

You can add guac or any other taco toppings you love.

That’s it – unless there is anything else you like to eat on top of your walking tacos. And of course, you can use doritos too!

This is such a fun change of pace from regular sheet pan nachos. And the best part is that the kids adore it!

Ingredients

Instructions 

  • Preheat the oven to 400 degree F.
  • Heat a skillet over medium heat. With ground beef, I rarely add any oil to the skillet because it tends to be fattier. If needed, you can add 1 teaspoon of olive oil (of your oil of preference).
  • Once the skillet is hot, add the ground beef and break it apart with a meat chopper or wooden spoon.
  • Cook, stirring and breaking apart the beef often, until it begins to brown. Add in the cumin, paprika, garlic powder, onion powder, salt and pepper. Stir well to disperse all the seasonings. Cook until the beef is browned.
  • Spread the fritos out on a sheet pan with the scoop facing up. Add a sprinkle of the cheese on top. Spoon the ground beef all over the chips so it sits inside each scoop.
  • Top with all the remaining cheese.
  • Bake for 10 to 12 minutes, or until warm, bubbly and cheesy.
  • Remove from the oven and top with lettuce, tomatoes, sour cream, green onions, cilantro, jalapeños and more. Serve!
